SparkCoach prompt ahead. :)
I'm actually really terrible at coming up with things that are simple, healthy, and fast. My one thing I do love is my turkey lavash wraps, inspired by the ones they sell at Kroger in the deli. I LOVE those things, and I'm so addicted to them. I asked the lady in the deli what they used for the filling, and she showed me the cheese spread they use. :)
So I use a green sandwich wrap, some spreadable garlic herb cheese (Alouette brand), low-sodium turkey, a couple of red leaf lettuce leaves, and occasionally a slice of low-sodium provolone cheese.
It's really filling, and can be sliced into pinwheels. I eat the whole thing (about 450 calories) or cut it in half when I'm not feeling the whole thing. A lot cheaper than spending $5 for the premade ones. :)
I also love throwing assorted raw veggies onto a plate. Carrots, broccoli, tomatoes, and some cheese cubes, and it's super yummy!
I suck at easy, though. I tend to default to breads or premade, high-sodium packaged things when I don't feel like cooking.
