Eat Your Veggies!

I know, you are thinking..."yes mom!" I struggle to eat veggies. I can easily eat fruit but veggies have been causing me grief.

I am doing better in the veggie area but I really want to be more consistent. I have been trying to add more veggies to meals. My DH hasn't complained so I am excited about that. So far there hasn't been much that he hasn't liked. The one thing he didn't like will be easy to tweak so that he will like it. He isn't a fan of black beans. I have found a recipe that has them in it and he likes it. He is just picky!

Years ago, I think we had been married a year or so, he wasn't excited about the dinner that I made. He proceeded to tell me that when he was at home in Mexico if his mom made something for dinner that he didn't want to eat, he would tell her to make him something else and she would. I told him to go outside and if he saw a sign that said restaurant then he could come in and order, otherwise, he needed to eat what I made and be happy about it.

There was another time that he made a face at the dinner (something he likes but just didn't want it that day). I didn't say anything, I just got up, took his plate and put the food back in the respective pans. He has never done that since! lol

He knows that if he wants fish, he has to cook it. I can't stand the smell or to even look at it. Again, I don't eat seafood. It isn't that I haven't had it cooked properly, I have tried fish of all kinds, prepared different ways and I just can't eat it. Let's just say that I can't swallow it and it turns my stomach! Oh and I really don't like my food to look at me! lol

So today on the SparkCoach, it was all about making healthy changes in our eating. It inspired me to really work to get more veggies into my meals. I am committing to getting 5 freggies (fruits and veggies) a day. I will do it!!



Today for breakfast I had a bowl of bran flakes with coconut milk and sliced banana.
Lunch was peanut butter and jelly on a sandwich thin, 2 carrots, and some grapes.

Oh before you get all in an uproar about how I wrote a blog and didn't do a video blog, I am NOT giving up the video blogs. I just wanted to do this quick blog and I will do a video with my weekly update later! emoticon

    I love your reaction to your husband's demands emoticon ! I am among the many trying to add more freggies to my diet. It not that I don't like them them, I just have to make a conscious effort to select and include them in my meals.

    I'm with you it is so much easier to eat fruit than veggies. I also do not like fish or anything seafood the smell is nauseating and the taste is awful. I have been trying to eat different types of veggies but usually go back to salad, lima beans and corn. I know starch but at least they are veggies.

    Yesterday my daughter had me over for an early dinner. She grilled filets, small white potatoes (which neither of us has had in ages) with onions, garlic, red, orange, and yellow peppers. She even made some kale chips on the grill. In the kitchen she juiced carrots, apples and lemons and made a healthy Caprese salad - minus the mozzarella cheese. She loves this type of cooking, the kitchen stays cool. Enjoyed your blog!

    It's kind of funny, I love both fruit & veggies, yet find it so much easier to eat my veggies than my fruits! I've been very conscientious about eating at least two servings of fruit a day to gain the balance. I always tell my close friends, if I get really moody, sit me down and give me a big green salad (smiling).

Perhaps some vegetarian recipe books would help you find new and fun ways to include veggies in your diet?

    Eating veggies is so important! You just have to find what makes them taste good for you! On the other hand, if something turns your stomach, don't eat it. When I was a kid, I would not eat hotdogs. Then about 14 years ago I developed these really severe food allergies where my throat would swell closed (my stomach would turn, too). I'm allergic to pork and apparently I've always been sensitive to the proteins in pork. So now, when someone tells me they don't eat a certain food I wonder. I don't push people to try food because, who knows, they could be allergic to it!

I love pasta dishes with veggies! In fact, I've been making mac n' cheese with veggies. I add 1/4 cup hummus to my noodles along with sautéed onions, peppers, and broccoli (cut in really small pieces). Then I sprinkle 1/4 cup shredded or grated cheese on top. Yum! The hummus adds creaminess and it counts as a veggie, too. We make our own hummus without all the salt, but I do add hot pepper sauce! It has a little sodium, but not that much and I use low sodium chick peas that I've rinsed well.

    You tell him! My husband is sort of a picky eater, but he always eats what I make unless he really, really hates it. Then he has cereal. That doesn't happen often!

    In the past I had many days, weeks, maybe even months with no veggies at all, unless I went to Home Town Buffet and had the salad bar there. But now I gobble veggies. I'm always looking for ways to get more into the foods I cook.(Yes, I said cook.) In order to eat greens, I eat green smoothies. They aren't pretty, but they're delicious. Love ya,

    lovin me some fruits and veggies!! it made me feel so good tonight when the grocery guy noticed my full basket of freggies :) he was all like "good job", lol.
gosh, sounds like you got the hubby in check, lol. i wish i could say the same. i'm just thankful he lets me buy separate food for me. maybe one day we'll get him there. :)

    I love freggies - but it IS easier to get in the fruits than the veggies. One thing that helps me is making a container of salad at the begining of the week. That way I can just grab a handful later and eat it as such or add chicken or other protein for more of a meal!

    I think we may be the same person, LOL!

I am not a fan of veggies at all, but I've been trying to get my son to eat them more often and I figure if he can try it, I can too. I decided to allow myself liberal use of sauces and permission to try different vegetables in different preparations. 5 servings is still a little bit ambitious for me, but I'm doing better than I have in the past.

I can't stand seafood, either. The smell is enough to turn me off and I have no intention of eating it anytime in the future.
