A lot of you asked for my muffin recipe.
It is actually a 2 for 1, since I used my Blueberry Chia Jam in the muffin.
All of my recipes are posted in SparkRecipes.
Let me start by saying, you are more than welcome to get creative when you recreate the muffin recipe.
I use canned pumpkin (not pumpkin pie mix, just plain old canned pumpkin). I use it in lots of things, great stuff, super good for you and very versatile!
That being said, you can substitute unsweetened applesauce and get the same results.
I also use liquid egg whites. You are more than welcome to use the equivalent in real egg.
I use flax milk. I am allergic to almonds, coconut, and all dairy products. I try not to do too much soy, so I was THRILLED when I discovered flax milk!
However, you can use whatever milk you choose.
A lot of you had never heard of chia seeds. These guys are everywhere!
I buy them at Whole Foods, but honestly...they sell them just about everywhere now.
Most grocery stores carry Bob's Red Mill brand, so look for chia. They are awesome!

I am currently using spelt flour, but you can use whatever flour you like. It will not affect the recipe.

Again, I used my Blueberry Chia Jam in the muffin.
Here it is slathered on a steaming Chocolate Protein Muffin!
And here it is inside the yummy muffin!
Once again, this recipe is not hard. You can substitute to suit your own tastes.
Even when it comes to the jam; I used 1 tablespoon.
If you don't want to make the jam, add whatever you have on hand.
You can add:
Some other pre-made jam
Fresh berries (about 1/4 cup)
Again, it is all about what YOU like!
You just need to be sure and track what you add in addition to the muffin itself.
Any changes will, of course, change the nutritional info that I have posted.
The microwave time will also vary. It takes 5 minutes and 20 seconds in mine.
I mix and cook right in the same glass measuring cup. I don't spray it, it does not stick,
