Bobby and hot coffee -- great way to start a Saturday.

My little intruders are almost gone. I've literally only seen two or three this morning. Another day or two and they'll be gone. Can't happen soon enough for me. Last night for the first time in weeks I actually felt comfortable cooking a full meal for dinner. Meat (groud beef patty), starch (some noodles) and a vegetable (okay, I cut up a tomato. Work with me here).

Apropos of the tomato, I had it with probably (okay, definitely) too much blue cheese dressing. I think it's time to Chop bottled salad dressings too, particularly anybody's Chunky Blue Cheese, because I love blue cheese and the creamy texture of the dressing so much that I could practically drink it. I'm sure foodnetwork.com or one of the other food sites has recipes for blue cheese and other dressings that are fresher, tastier and healthier.

My kitchen is the cleanest it's been in months. I still need to clean out the fridge and mop the floor, but all the dishes are washed and put away (not counting what's in the dishwasher, but I insist on running only full loads), the countertops are clear and the stovetop is clean. I actually feel like going into it again!

My bedroom is the one room I haven't tried to clean in ages. I'm going to devote one hour to it this afternoon. It would be nice to be able to reach my closet to put clothes away again. And tomorrow is laundry day (oh, goodie). But it'll feel great to have it all washed.

Tonight Food Network is having a Diners, Driveins and Dives marathon, and I am NOT a fan. But last night Cooking Channel ran three hours of Good Eats, and I recorded it to watch tonight. So that means I get to spend time with all three of my guys today, because Chopped is also on twice this afternoon. I also want to get back to work on the Tuscan picture I'm embroidering for the dining room.

Let's be honest, it's going to be too hot here to want to go anywhere anyway.

    Wow sounds like you have made some great progress on getting everything in your house organized and cleaned. I know the feeling about leaving your bedroom til last as I have a room that is pretty much ready to burst it's seams we have put so much stuff in it.

I hope you enjoy your time with "the boys" and I would love to see your embroidery work.

    Congrats on the clean kitchen. I know how good it feels to have a clean work space to cook in. I'm hoping to clean my oven this week. I have a self-cleaning oven, but I have to be careful because it sets off my smoke alarm unless I open doors & put the exhaust fan on while it's cleaning.

    Okay, bear with me on this one: Here's a bleu cheese dressing:
Creamy Blue Cheese Dressing:
1/2 pound crumbled blue cheese, plus 1/4 pound for garnish
3/4 cup sour cream
1/2 lemon, juiced
2 tablespoons red wine vinegar
Pinch cayenne pepper
1 tablespoon minced chives
To prepare the creamy blue cheese dressing: Whisk together 1/2 pound blue cheese with sour cream, lemon, vinegar and cayenne until smooth. Fold in chives, cover, and chill until ready to serve.

Use Greek yogurt instead of sour cream... it really will taste good. Cut the amount of cheese in 1/2 and taste before you add vinegar cause yogurt is tangy. You are not using any "chemically adjusted" food.... just a lower fat source of creaminess.
Let me know if this works. BTW, my favorite Greek yogurt is Fage.

    I love the Food Network too, and also get the cooking channel that I like as well. I love the show on there French Food at Home. Laura, the chef, is really easy going, and she makes a lot of things that are simple and look delicious! Plus they have music on there which I find so relaxing.

You are doing great on beginning to work your plan toward meeting your goals. You dinner was a simple one, and I'm sure tasted great! I love the Kraft Reduced Fat Mayo with Olive Oil on my tomatoes, and use it in all my cooking instead of the full fat mayo. It's healthy because of the Olive Oil, and has only 45 calories and 4 grams of fat per tablespoon, but the fat is a MUFA healthy fat.

You could make your own blue cheese dressing with reduced fat or fat free sour cream or greek yogurt, too.

    Your ambition is admirable, and you're 'planning the plan, then working the plan'. I can just imagine your fancy & clean kitchen!

I'm no chef, sadly, but I did switch away from bottled dressings because of their ingredients. So now I really enjoy using plain non-fat yogurt on my salads. I thin it just a bit with a little water. I sprinkle raw sunflower seeds on top of the plain yogurt to add taste and texture.

I hope you really enjoy your viewing tonight! You deserve it after all that work!

    I use to watch the Food Channel all the time, but haven't done so in a while. I love their creativity with food. Wish I could do that! Cleaning . . . yes I need to evacuate the family from the house for about a week and just attack it myself. They are more than willing to help, but tend to just get in my way - lol!!! I wish you well on your cleaning this afternoon . . . . . I'm doing laundry now!!

  Your chopped list is getting rather large. I truely hope you aren't going to try and chop all those items at once. IE my thought is to continue using some of the items until you find replacements that fit your schedule/budget. You can't make everything homemade all at once.

  I like to watch food canal too try to find ways to make their recipes lighter get some pretty meals that way and they re legal, just a few substations Ever made your blue cheese dressing with yogurt? You dont miss the mayo at all and its really good.
