This is a recipe that can be cooked on an outdoor or indoor grill (or even a griddle or oven)
4 Chops, bone-in
4 garlic cloves, minced
2 Tbsp. Dry basil leaves or 1 cup fresh leaves, packed
*** if dry rub the leaves in your palm to release oils and if fresh just mince
2 Limes, juice w/a fork
3 Tbsp Oil
1 tsp Black Pepper
The marinade can be made in a processor, blender, or a bowl. (if using a bowl just mince all ingredients)
to your bowl add garlic, basil leaves, juice from 2 limes, oil, and black pepper. Blend by hand or in a processor.
I use a bag (you can use any dish or a bag) and add the pork and marinade and rub BOTH sides of pork. Let sit for at least 15-30 minutes. I usually let sit an hour or so if I have the time.
Prepare your cooking area (I usually cook on an indoor griddle or oven)
Grill or Griddle your chops for 7-8 minutes each side. or bake at 350 for 25 minutes
Hope you enjoy. It is a little high in fat (37, i think) but little sodium and LOTS of flavor
