I follow a page on Facebook called "Finding Fitness". If you are on Facebook, definately check her page and "like" it. She posts some pretty fabulous recipes. Tonight for dinner I made her Protein Pancakes. I entered everything into my nutrition tracker and these babies pack in 42 GRAMS of Protein with 367 Calories. Can I get a big Woo Hoo!
Very simple and quick to make. Give them a try and see if you don't agree. I used a little "I can't believe it is butter" on top of mine with some sugar free blackberry jam... but you could top with your favorite topping.
5 egg whites
2/3 cup old fashioned oats
1/2 cup cottage cheese (I used 2% Milk Fat as that is all I had on hand)
Blend well in blender... then pour on griddle. My batch made 8 pancakes and were very filling. Enjoy!
