This weekend was my first real weekend (where I didn't have to worry about work and/or school), in a long, long time.
I had a fantastic two days.
I went for a run on Saturday (3 miles), and then on Sunday, I went for a 5 mile backpacking hike. Do you know that I almost didn't track my hike because it was so fun, but it turns out that I burned 1,000 calories for hiking up to the summit?! There was a time when I would have been WAY too shy, let alone not physically fit enough to go on a mountain hike where I didn't know any of the other hikers. I am so glad that I have continued to push the limits with my exercise because it has lead to a much fuller (and way more fun!) life. The photo below is from the first lookout. The one above it was sort of in the Appalachian "mist," and was equally beautiful!
Yesterday, I also recommitted myself to making healthy, whole not out of the box food. I broke out the crockpot and made a twist on ratatouille, I used yellow squash, zucchini, tomatoes, pork, serrano peppers, onion, parsley, oregano, and some black pepper, and I topped it off with cilantro and pine nuts.
I also made mamoul cookies; which have pistachio nuts in them and delicious butter cookie flavor. NATPLUMMER had sent me the recipe before I moved, and I never had the chance to make them with my test and new job starting...until last night. OH MY GOODNESS, these are delicious, especially if you love cookies that are not too sweet. I actually built a home still (hehe
) and distilled my own rosewater for the recipe. Thanks, NAT! I had such a good time making these.
As you can see from the final pictures, I couldn't locate my baking pan (not sure but I may have lost it in the move?), so I used a disposable broiling pan to double as a cookie sheet...LOL. They are still good-tasting!
