New Recipe: Tuna Artichoke Melts

Today I tried a new tuna melt recipe.
I got it from the Taste of Home website.

According to Taste of Home ~ there is 335 calories in a serving of 2 English Muffin halves.
I however, made mine own version:
2 – 5 ounce cans of albacore tuna
2/3 cup chopped canned artichokes (that were drained)
¼ cup olive oil mayonnaise
½ cup shredded white Mexican cheese
A sprinkle of Tajin Mexican seasoning (which has lime & seasonings in it - the original recipe called for lemon pepper & oregano)
Mixed that all together – measured out ½ cup and spread that on 2 English Muffin halves and topped each with 1 Tablespoon of the shredded white Mexican cheese. I then sprinkled some paprika on top of the cheese.
Broiled with racks left as is for 5-7 minutes.
The remaining 1-½ cups of tuna salad is equal to 3 more servings. I refrigerated that for use later.
I haven't calculated the calories in my version yet.
They were very good! If you like artichoke dip and are a tuna melt eater, you might enjoy these.
And now, I have 3 more lunches ready to go for this week.
