At the beginning of the season, I wrote about trying again to grow some veggies. I picked zucchini because it is so hardy that I thought it would grow despite what I do. I almost lost my plants twice due to weather conditions but they carried on. Like us, whatever doesn't kill us, makes us stronger, lol.
So I have these 3 plants and finally I have some veggies growing. At first it was just the 3 for the longest time, now 2 more have grown. Yesterday, I went out and picked one to make a zucchini frittata for breakfast. It was so good. The fact I grew it myself and then ate it so fresh made it even better. I'll definately do this again next year. I have my friends to thank for encourageing me to try growing something again after last years fiasco with tomatoes.
Today I am making veggies in a tomato sauce for dinner. I picked another zucchini, am adding string beans, onions, and a small potato. I also have a small piece of pork roast leftover. I like this meal because I throw everything in and just let it simmer. If I can find the small piece of frozen pepperoni, I'll add that too for flavor. The aroma reminds me of old comfort foods and instead this is the healthy version. How my tastes have changed, ;)
