From pp. 249-250 of Isa Chandra Moskowitz's Appetite for Reduction.
Basically as written, but did it in the slow cooker and left out oil and mint, used water instead of veg broth (didn't have any, but it essentially makes its own) and fresh tomatoes instead of canned (had a ton from the far-mar), and added additional (yellow) squash.
Would definitely make this recipe again.
