I just have to share these because they are so lovely and wonderful. And guess what? Tomorrow I can do the whole thing again!!
So for breakfast I had an amazing smoothie. It consists of frozen banana, almond butter, medjool dates, chia seeds, and soy milk. MMMM.
Although this morning I had it by itself, I think tomorrow morning I will add in a piece of homemade bread topped with cinnamon sugar after my 3 mile hill repeats.
For lunch, I made a tried and true salad. Arugula, roasted beet, toasted pine nuts, goat cheese, oil and balsamic vinegar.
And for dinner. OH! Dinner!! A phenomenal mix of flavors, and it's really pretty too.
Soba and zucchini noodles marinated in sesame oil, rice vinegar, and a little bit of lime juice. Then there's the marinated tofu: more sesame oil, dried mint, coriander, and parsley (it was supposed to be fresh but...shhh), and ginger. Then all the pretty things on top: raw Chioggia beet, cantaloupe, grape tomatoes, and bean sprouts.
So many good nutrients today!!
I need to start setting some goals. So, here are my August goals:
1) No cheating on the Half Marathon Plan.
2) Track every day, even on a 'cheat' day
3) No food after 8 pm
4) Eat out only twice. Healthy choices!
Wish I could round it out to an even 5, but I can't think of a good thing I need to work on.
