I thought it would be fun to have suppers with a foreign flare while the Olympics are going on. Americanized, of course. My fish & chip dinner came frozen, but it was still a treat to eat while hubby and I enjoyed the opening ceremony.
My Mexi-American came in the form of a layered dip my co-captain recommended. It was easy and tasted great on a hot summer's night. Last night a touch of Italian - meatball subs and salad. I really Americanized that one using elk rather than veal and reg ground beef.
My version of stir-fry is on tonight's menu. We all know by now that what we call "Chinese" is really American, but it's the spirit that counts here. When I was trying to figure out dinner China happened to be ahead in medal count, so why not?
Upcoming: Canadian, French, Greek, German, and Mid-Eastern. This is a fun change of pace. It's challenging in some ways, too, because I am committed to my program and determined to find ways to make the healthiest possible.
Back to looking up recipes. I need a week's worth at least because Wednesday is shopping day.
