My weight is staying the same, which is frustrating, but I know it's going to come down at some point. I've increased my calories to 1200-1400 per day, after realizing I'd only eaten 500-1000 for two weeks. I feel like I have to force myself to eat that much, although that may be partly because my stomach has probably shrunken. I'm back to working part time, which means that some days I'm on my feet for 8 hours; and I'm also trying to do at least a little bit of exercise every day, so 500-1000 calories isn't going to cut it.
Mom and I made this amazing pasta dish the other day. It was tomatoes, red onion, and spinach stir fried with olive oil, garlic, and a ton of spices (and a tiny bit of cream cheese, I know, not vegan lol). Then we added cooked whole wheat macaroni. It was absolutely delicious.
