Tip 31 is,
Cook Your Starches Al Dente
Over time, high blood sugar levels can lead to insulin resistance, which has been directly linked to weight gain. To help avoid blood sugar spikes, undercook your spaghetti, oatmeal and other starches to slow digestion and prevent starch from gelatinizing, recommends Andersen. "Starch in raw food is stored in compact granules, which are hard and difficult to digest. But when you cook a raw starch in water it expands, making it very easy for the enzymes in our gut to convert to simple sugars -- rapidly increasing our blood sugar. By serving pasta al dente, the starch is still protected in the granules, so it raises the blood sugar slower."
