Weeks ago I was playing with my goals and fitness and I set a modest goal to burn 1500 calories a week. Most of my exercise to lose the weight I have lost so far, is just plain walking and IF I walk 2-3 miles a day, I can easily burn that many. HOWEVER, I have not been good for the past month. I hadn't reached 1500 calories very many times since I set it. I have been close, but not getting there.
Well this week is different. I just got home from my second Zumba class of the week and it put me over my goal. I can't wait for Saturday's 5% weigh in....this week is gonna be better!
I also spent part of my day off making Black Bean and Corn Salsa (which I eat like salad), and Chicken Salad made with chicken, apples, grapes, celery and greek yogurt instead of mayo. I also made a triple batch of Asparagus and Cheese Frittata for breakfast, so I have quick breakfasts for the next 2 days. I am working a double shift tomorrow, so I need healthy food and a quick lunch for Saturday, since I will be getting up late ;^D 4 shifts in the next 3 days. Wish me luck!
