I always have high hopes of prepping my week's meals every Sunday. But it generally never happens. We are rarely home, which means when we are home, it's laundry time.
But today we were home all day. I decided to cook!
I made three SparkRecipes today, and one Taste of Home recipe.
This was very good. Pretty easy to make, and refreshing. My bananas were too ripe, though, and overpowered the dish. I'll be making it again!
Almond Joy Protein Bars
I was very excited about this recipe, since I love Almond Joys. It's very dry and crumbly, and tastes a bit off. I might try it again with a little more honey.
Peanut Butter-Fudge Protein Bars
This one is fabulous! I highly recommend it. I expect I'll be making it a lot more.
Spicy Baked Oatmeal Pudding
I haven't tasted this one yet. But it will be my breakfast every day this week, whether it's good or not. It's very soft - not what I expected. But the flavors seem appealing.
UPDATE: It tastes good. Not too strong, so those who like bold flavors will probably want to add cinnamon. It has a creamy texture - definitely more like a pudding than a baked oatmeal. But it's high protein and low sugar...exactly what this girl needs in the am. Will be making again!
I'm nice and tired now. But I feel like I accomplished a great deal!
