A New (and healthy) Option for Dessert

Saturday, July 07, 2012

Probably some of you have already come up with this, but maybe this post will help some of our Newbie Sparklers:

I have the sweet tooth from hell. And when I eat sugar/carb food my body freaks out and craves more and more and more of them. Most times in my past, this has lead to a long period of, "oh what the hell, I can't do this right now, I'm gonna eat what I want until I try to diet again." Maybe some of you can relate.

I realized I need to get a grip on REALITY:
** I LOVE sweet stuff - especially cake and ice cream.
** Instead of DENYING myself of sweet stuff - which ultimately leads to disaster every time - I need to EMBRACE the reality of my sweet tooth. Denial has not worked thus far.
** Find healthy alternatives

This is BIG GROWTH for me.
So, I researched a sort of "eat this not that" type of foods that are good for those of us watching our sweet tooths, but still needing something sweet - besides fruit. I found that Angel Food cake is the lowest of all cake stuff for calories. Then I went to the store and EUREKA- I found a SUGAR FREE angel food cake!! Only 70 calories for a good sized piece.

I put some frozen blueberries in the microwave until they were hot and had that juicy juice circling the bottom of the bowl. Cut my angel food piece and put it on top of the heated blueberries. Next I put 2 servings of Light whipped topping on top.

Voila! The angel food cake sucks up the juicy blueberry juice and has the consistency of frosted cake -- yuu-uuum!

I can mix up the fruit stuff too, using peaches and mixed berries, and strawberries etc.
Thank you, Spark, for something that is so simple, but my Rat Race brain has never been able to come up with until I tapped into the creativity of members in here and our Spark Book.

I agree about the angel food cake....and there are so many things you can do with it.
Got this recipe from a fellow Sparker so I'm passing it on to you.

    3, 2, 1 CAKE

These individual little cakes are amazing
and ready to eat in one minute! They are perfect
for whenever you feel like a treat without all the fat
and calories that cake can have. Genius idea!

All you need is 1 box Angel food cake mix
and 1 box any other cake mix.

    DIRECTIONS:

In a ziploc bag, combine the two cake mixes together
and mix well. For each individual cake serving, take
out 3 Tablespoons of the cake mix combination and mix it

with 2 Tablespoons of water in a small microwave-safe
container. Microwave on high for 1 minute, and you have
your own instant individual little cake!

KEEP remaining cake mixture stored in the ziploc bag
and use whenever you feel like a treat! You can top
each cake with a dollop of fat free whipped topping
    and/or some fresh fruit.

    Helpful Tips:

This recipe is called 3, 2, 1 Cake because all you need to remember is:

    3 tablespoons mix,
    2 tablespoons water,
    1 minute in the microwave!"

TRY various flavors of cake mix like carrot, red velvet, pineapple,
lemon, orange, etc. Just remember that one of the mixes has
to be the angel food mix; the other is your choice.
    The flavor possibilities are endless!

    NOTES:
The best thing is, you open both cake mixes into a gallon
storage bag, one that 'zip locks' or 'self-seals', or a
container that seals tightly, shake the two cake mixes to
blend and then make the recipe. Storage of mix is simple,
put it on a shelf. No need to refrigerate, since the mix is dry.

Always remember, that one of the cake mixes MUST be
Angel Food. The other can be any flavor.

I have used this with a sugar free devils food cake mix....it is marvelous! I like putting strawberries or raspberries on it.

Great idea.... I don't like whipped topping, so I could do without. And, angel food cake is my favorite.... when I was little, my grandmother always made one for my birthday.
