A cooked "salad".... griddled aubergine, fried red onions, boiled new potato with raw tomatoes and a raw herb and cider vinegar dressing. Chilled for a few hours and delicious with cheese and pine nut topped mushrooms!
No added sugar or fat wholemeal banana bread for my boyfriends lunch box, after we got those SO green banana's in our delivery box and having to wait a week to eat them, and then getting more banana's we had far too many and they went soft, so I hunted down a no added sugar (no sweetener, no pretending honey isn't "real" sugar like loads of recipes!) and only fat from the 2 eggs in it. Each bun is 111 calories.
Mango, quinoa, alfalfa sprouts salad with a fresh herb, toasted pine nuts and lemon juice dressing, having with roast chicken tonight!
