Just got home from work. Had a sf jello with whipped cream as a snack while I made dinner. its a late night home, but being so busy at work, I didn't have time to even think about food. Which is good, because I work in an Italian place!
While enjoying a dt Dr. Pepper, I am smelling my dinner bake up. I want to call it a chicken, mushroom and spinach lasagne. I chopped up raw chicken and browned it in butter and olive oil with italian seasonings and mushrooms. Then in a pan, I layered 1/2 c of tomato basil sauce (I found one that was 4 carbs per 1/2 c), 1/2 cup fresh spinach, half of the chicken mixture and topped with 5 slices of mozzarella, then repeated, then topped it with one more 1/2 c of sauce and about 1/2 c shredded mozzarella. I baked it at 350 for about 25 minutes and right now it is sitting there to make it all solidify a little more :) I put the recipe in sparkpeople and it comes out to a little less than 4 carbs per piece. It will make six big portions of "lasagne". I know what I will be eating for the next few days. It smells amazing.
