CSA Week 4 and 5

I was out of town last week for training. This meant that instead of getting my box on Tuesday like i normally do, I picked it up on Saturday. that was for week 4. But then i got my normal box for week 5 on Tuesday so I am flooded with fruits and veggies right now.

Week 4
plums, plums and more plums
patty pan squash
cucumbers
collards
spring onions
garlic scape
peaches
blueberries
black raspberries (the last of them)


Week 5
Yellow plums
Yellow peaches
Donut peaches
Cucumber
Zucchini, summer squash and patty pan squash
green beans (and extras form picking)
new potatoes
spring onions
Swiss chard
and Giant Blackberries


So already this week i have made sauteed collards and i have made stuffed patty pan squash. i really like the collards but i was not a huge fan of the patty pan squash. The stuffing was not very flavorful. i have made cucumber cream cheese little sandwiches. i made a plum black raspberry crumble.

I think i am going to make a green bean/potato salad. and i might make zucchini patties/pancakes

my biggest dilema right now is the cucumber because they don't freeze well and i don't know of many ways to eat them.

  Pickles would be good.

The plum black raspberry crumble sounds delish!
