Cooking in the Heat

It's heading toward 100 degrees again today in Wisconsin, and I have no desire to turn on my oven. Those awesome fiber-filled muffins I was planning to bake? Not going to happen. But since every day cannot consist of cold meat and fruit, I have brought out the slow cooker.

Yesterday I used Spark recipes and simmered a whole chicken all day long in white wine and onion soup mix. (Recipe: http://recipes.sparkpeople.com

The kitchen stays cool, and nothing beats dinner just waiting for you at the end of the day.

    OMG - I never thought to use the crockpot in the summer to beat the heat!....do you think it will work to reheat the kid's pizza for dinner? emoticon

We're getting hit today on Long Island...what can we do...it's summer! LoL

    Sigh...I had 2 crock pots and both met with misadventures in the last few months so now I have none. I miss cooking with the crock pot.

    The crockpot is a terrific idea! Nutritious meals ready when you want them. Not resorting to potato salad, macaroni salad, hot dogs & hamburgers. Or high sodium lunchmeat.

You can get your veggies thrown in there, too. You are one smart emoticon

    We love Crockpot cookery! pork tenderloin, pot roast, simmered in broth with tomatoes.....double yum.

Yeah, you probably want to use the grill outdoors as well....nothing like some freshly grilled salmon!

    I have not had the stove on all week.

When it is HOT! HOT! HOT!, I cook everything on the grill that I can. Hubby and son get meat, and I share roasted vegetables. No clean-up involved, other than scraping off the grill grate. Score!

As much as I hate the heat, I love the foods of summer. Nothing like fresh, cold watermelon, cantaloupe, peaches, plums and berries to snack on instead of junk! Yum-my!

Temps here are expected to be in the 100's for the next week or so, and most likely beyond that. Summers here (western TN) are brutal, and I miss my ocean breeze oh-so-much!

Keep sharing all your heat-beating tips! We sure can use 'em!
