I made tonights dinner yesterday, its a salad of very fine cut cabbage, with 1 sweet apple, chick peas and lots of chives, with a palm vinegar and mustard dressing. It needs to sit overnight to let the vinegar soften the white cabbage. I also boiled some new potatoes with mint to have with it.
Today I made 6 boxes of curry to freeze, and tomorrow will be cooking orzo for my boyfriends lunch box, black beans for breakfasts and going to try growing alfalfa seeds when I can find a jar!
Being organised feels good.
