Marvelous Meatless Monday Menu

I am not a strict vegetarian by any means, but have always looked for ways to decrease the amt. of animal fat in my diet. Here's a recipe that really hits the spot on those days when you just crave something for supper but not meat!

California Roll-In-A-Bowl (kid tested, Mother approved!)

1 cup brown rice (1/2 cup dry) *cook rice per instructions -- the ratio is 1 cup rice/2 cups water*

1 head chopped butter or romaine lettuce *or whatever other greens you might want to use**

8 oz. imitation crab meat chopped

1 English cucumber thinly sliced *peeling is optional -- but do give it a scrub*

1 ripe avacado diced

1 grated carrot

3 cups chipped ginger (can use pickeled ginger -- found in Asian markets)

Dressing for California Roll-In-A-Bowl

3 Tbsp. rice wine vinegar
1 Tbsp. light soy
Wasabi or wasabi powder to taste (I use about 1/2 tsp. of either)

Put lettuce into bowl with the other ingredients for the salad. Whip up the dressing and pour it over the ingredients and toss.

You can use the following for a garnish, too, if you want to:

1 Tbsp. sesame seeds, toasted
1 large sheet of Nori (seaweed) toasted then crumbled

Nutrition information for the whole salad:

serves: 4

calories: 189.2 calories
carbs : 21.3 gm.
fat : 8.3 gm.
protein : 6.5 gm.

This is a great dish during the summer when you just want something light. Enjoy!

    It on my must try list team mate I am really completing the challenges each week on the team looks like you are too as you took the time to share with us your meal. I was not that fancy i just did chef Megs Mac and cheese with some fresh fruit. emoticon have fun completing the rest of the challenges for the week. emoticon emoticon

    Thanks for the great idea! Have you ever had napa cabbage? I love shredding it and adding it to salads. I'm not crazy about imitation crab meat though but I can see adding a bit of firm tofu to get the protein in and having it be completely vegetarian.

I'm not a vegetarian either but I do try to eat less meat nowadays so I'm always looking for great meatless options.

  Hi Barb..........
That sounds great!!!!! My husband is leaving for a week-long fishing trip tomorrow and it is supposed to be very hot and humid the entire time he is gone. I think I will stop for groceries after my Dr. appt. tomorrow and try this while he is gone.

  That sounds like a really great meal. Just so you know, imitation crab is made of fish, usually Alaskan Pollack, so it's not technically meatless. Just remove the crab and you still have a great meal.
