I found a new recipe in a Fitness magazine (a gift subscription from someone....but I have NO idea who...) that I wanted to try so I tried it this morning. Skillet Hash with Spinach....I had to make a few tweaks since I didn't have the exact correct ingredients. Basically though it was red skin potatoes with spinach, peppers, onions, and some spices topped with cheese. To be honest, other than in salads on occasion, I've never really tried spinach, so the fact that I even thought this sounded/looked good was a wonderful improvement from "before". I figured this improvement would be enough, even if the recipe turned out awful tasting. But it was delish! My hubby and I both thought it was yummy and I look forward to having some tomorrow morning too!
I bought the SparkPeople Cookbook online last weekend and I got it in the mail earlier this week. I tried the "Warm and spicy banana waffles" earlier this week - yummy! I wanted to try the "Three cheese macaroni" basically since I first saw it advertised with the cookbook so I had to try this tonight for dinner....we used up the leftovers from the week and added this to it so that if it wasn't yummy we would still have other food to "fall back on".
Unfortunately I'm not a huge dare-devil and don't like to try new recipes as the only food for the meal, so anytime I try a new recipe I make sure there is something else in the house just in case.
So anyway I had leftover spinach from the breakfast hash (bought too much....) and decided to toss the spinach in with the noodles when I added the cheese sauce and we found this WONDERFUL! Even my 3 year old gobbled it up - in comparison to his other food.
Yep, I had spinach for breakfast and dinner today - something I have NEVER done before in my life - EVER! GO ME!
