I AM LOOKING FORWARD TO THE SUMMER CHALLENGE AND I HAVE GOT A SIGN THAT SAYS "I PROMISE TO MAKE HEALTHY AND POSITIVE CHOICES SO THAT I CAN LIVE A HEALTHY LIFESTYLE AND REACH MY GOALS emoticon IT'S ON MY FRIDGE BY MY COMPUTER AND ON MY NIGHT STAND SO I SHOULD BE ABLE TO FOCUS ! I DID LOSE 1 LB THIS WEEK AND I THINK IT'S BECAUSE I ATE WATERMELLON ALL WEEK FOR A SNACK ! emoticon SO YOU GUESSED IT I BOUGHT ANOTHER ONE THIS WEEK ! emoticon I ALSO BOUGHT SOME STEAMABLE PACKS OF VEGGIES AND BREADED ZUCCINI THAT CAN BE FIXED IN OVEN 8 PIECES IS 130 CALORIES BECAUSE DH WANT THE FRIED ZUCCINI ! ANYONE GOT IDEAS OF HOW TO FIX ZUCCINI THE LO CAL WAY ! emoticonREALLY LIKE MY LITTLE FINCH HE IS "PRECIOUS "!!!! MY OTHER 2 PARROTS ARE SIDE BY SIDE IN DIFFERENT CAGES AND SEEM TO LIKE EACH OTHERS COMPANY . I MISS MY MEYER IN THE LIVING ROOM THO HIS NAME IS PEPPER . THOMAS IS MY ECLYPTUS HE IS PRETTY NOISY BUT I AM WORKING ON THAT ! emoticonHAVE A BLESSED SUNDAY AND DON'T GIVE UP ! emoticon

    I love sauteed zucchini in some butter, olive oil, and spices. You don't need any breading. it's delicious!

Good luck on your challenge, can you tell me more about it?

As far as the zucchini .... have the thought about grinding up a high fiber cereal with seasoning for "breading" dredge in nonfat buttermilk or egg white or a mix to make it stick and spray both sides with no stick spray and bake it? I have done this for "unfried" chicken and other things....
Also cut in chunks.. toss in herbs and spices sprinkle with a little olive oil and bake/roast. There is actually a recipe of chef megs very similar.
Another thing I do is a veggie spaghetti sauce.. chunks for summer yellow squash and zucchini.... and tons of other veggies. Pasta of your choice.
I have also heard of zucchini parmesan..not breaded but sauce and very light sprinkle of cheese on top?

    A tasty and healthy way to make zucchini is to slice it to a moderately thin width, spray it with a light amount of olive oil, sprinkle on a small amount of shredded parmesan cheese (not powdered, the fresher/softer the better it will melt). Then broil it for a few minutes (8 is usually plenty) until the zucchini is soft and the cheese is crisp. Hint: If you do it in a broiler pan (or cookie sheet) that's been covered with aluminum foil the cleanup is incredibly easy!

    I'm doing this challenge too and I'm so excited! We are going to feel so much lighter and healthier this fall!! Great idea, posting it on the fridge, I'm going to do that too.
p.s.
I don't know if you knew, but online, using all capital letters is YELLING and its rude. You prolly didn't know. =)

    Hi There...
Yeah ! 1 Pound gone Forever !!!!
I make stewed tomatoes...
I use fresh tomatoes cut up, some onion diced, celery cut up and zucchini cut up.
Sauté the onions, celery and zucchini in a sauce pan. When tender add the tomatoes and simmer for 10-15 minutes.
Top with whole wheat croutons and parmasian cheese. (both optional)
It's a meal in itself...
