By this time it is clear I incorporate the Diabetic Diet into my rather eclectic plan.
This is something I found in Diabetic Living.
Servings: 4(3/4 cup servings salad and 1 tablespoon yogurt mixture each)
Start to finish 15 minutes
2 ripe pears, cubed
2 Tablespoons lemon juice
1/3 cup chopped pecans, toasted
1/4 cup plain low-fat Greek yogurt
1 Tablespoon honey or agave nectar
Ground cinnamon (optional)
1. In a medium bowl combine pears and lemon juice. Stir in pecans. Divide pear mixture among four bowls.
2. In a small bowl combine yogurt and honey. Top pear servings with a spoonful of yogurt mixture. If desired, sprinkle with cinnamon.
Per Serving: 140 calories, 7 g total fat (1g sat fat), 1 mg chol., 7 mg sodium, 20 g, carb (3 g fiber, 14 g sugar), 3 g protein.
Exchanges: .5 milk, .5 fruit, 1 fat
Enjoy as a snack or breakfast.
