I wanted something that wasn't just my normal oatmeal for breakfast this morning, so I went on a search. I wanted an egg-free breakfast bar, so that I wouldn't have to fret about cholesterol (I had no egg whites on hand, and I hate seperating eggs, it feels wasteful). I found this one, and thought, hey, why not:

I used fat free milk, since that's what we had. Otherwise, I used unsweetened applesauce, 1 tsp. cinnamon (plus extra, sprinkled on top), and I kept the brown sugar (although you could possibly skip it, if you felt inclined!). They came out moist...the texture is pretty much what you'd expect baked oatmeal to feel like, but I didn't find it unpleasant.
I can't wait to play around with this and make my own variations...! :-)
