Meatballs, Veggies and Puttanesca

Today's lunch was delicious, and so very easy! I put 4 Trader Joe's frozen Turkey meatballs in a microwave safe dish. Then I added some leftover ratattouille (eggplant, peppers , onion , tomatoes and zuchini) and poured 1/2 cup of puttanesca sauce over the whole thing. 2-3 min in the microwave was all it took and I had and I had an easy low ,anti-inflammatory Zone meal. Very filling and satisfying! I ate a few hours ago and I'm still feeling full. One of the things I love about the Zone is that you can apply the principles to whatever you have on hand in the fridge. It takes no time at all to put a meal together and these meals last me for hours, no hunger or deprivation involved. I have to remind myself to eat beause I'm rarely hungry. The energy I have in the Zone contiunes to amaze me. Have a great day everyone!
