My husband could eat the same meals everyday for a year. That makes me insane! I like variety. But I've been known to buy a bunch of groceries and a lot of it go bad before I eat it all because I just can't get to it all in time.
Since he is out for the summer (he's a teacher), we have been eating lunch together. He is usually still asleep when I eat breakfast, but he needs something when he gets up. I have been planning two lunches and two breakfasts for the week. It works out perfectly! Enough variety that I don't get bored and he likes it too. Best part? All the food gets used up and not wasted!
Week 1 Breakfasts
boiled eggs, canadian bacon, fruit
yogurt, granola, strawberry bowl
Week 1 Lunches
hummus, veggie and turkey wrap with fruit
grilled chicken salad
Week 2 Breakfasts
veggie frittata, toast, fruit
cottage cheese and tomatoes
Week 2 Lunches
pita pizza, fruit
chicken/black bean burritos
Here is the recipe for the frittata. The asparagus at the store looked horrible so I substituted chopped fresh broccoli. The one recipe was enough for us for all week.
