I bake whole chickens (with the skin on) in a glass baking pan. And when it has cooled I take the skin off and de-bone the meat. Then I pour the "juice" into an ice cube tray and freeze. Then when I'm sauteing my veggies I add a couple of the "chicken cubes" and I got a little fat to keep veggies from sticking and some flavor. I'm sure it adds some calories and fat to the veggies but I doubt if it's as much as butter or oil.
And if anybody out there can tell me how many calories one ice cube of chicken juice is I would appreciate it.
