Did everyone get to see the Transit of Venus? So amazing! It's always one of those "must do" things since it's only going to happen, oh, once in our lifetime. The husband and I have been looking forward to this event for a few weeks now and finally when the day came around to it, it was cloudy. Thankfully we went ahead at the last minute and went to our nearby lake lookout which was having a viewing event and had a good time. The clouds whisked themselves away and we were left with the viewing of Venus right in the middle of the sun. Even though it looked just like a black dot, it was quite remarkable to think it was another planet in between us and the sun.
So anyways, the hubby and I made a protein packed dinner for two and went to have a nice picnic. It was a bit windy but that didn't stop us from enjoying ourselves. We didn't get much exercise in but that's okay because we can only use this excuse once in our life, so we might as well use it when we can...
Breakfast: I've been trying new things for breakfast. The husband found a box of Malt o Meal at the store the other day and wanted to try it again. His parents used to make this all the time when he was young and he has fond memories of it. I read the outside package and wasn't turned off by the natural ingredients (minus a few preservatives) so I said okay. Now I'm trying to get used to it but haven't gotten the taste for it yet. I have tried various things in it but today was Sesame Fig Jam from Israel. It gives a nice flavor. I forgot to take a photo - sorry. I also had Michigan Cherry Coffee.
Lunch: Today was leftover day and miso. I made the miso in a large batch so that we could have enough for dinner too. I just love having it daily. I added so many things to it as you can see... My favorite is Korean Sundried wakame and Chinese White Fungus in it. Mmmm To the side I had leftover Japanese potatoes, cabbage and onions. For a cold drink I had leftover Michigan Cherry coffee with Trader Joes' unsweetened almond milk and a little brown sugar.
Snack: Leftover Flourless Citrus Mint Chocolate Chip cookies and a cup of milky tea (again with Trader Joes Unsweetened Almond Milk and brown sugar)
Picnic Dinner: Japanese Red Miso with Chinese white fungus, Korean dried wakame, carrots, onions and American radishes. We also had a traditional Japanese tofu "scramble" that contained a few Japanese sauces, tofu, carrot and fresh spinach. Alongside these two plates we had Korean brown rice and Korean sun-dried, salted seaweed. For dessert we had an apple each. Nom nom nom
For a snack after getting back from the event, we went ahead and make 1/2 c popcorn to share between the two of us. We make it on the stove instead of in the microwave.
