Running out of food....

Tuesday, June 05, 2012

Good Tuesday Sparkfam! It's a beautiful day here in Chicago. I would love to go for a walk on the lakefront but atlas I have to work. I have got to pay the bills or at least I think I do... I have been doing a lot better since I locked myself into doing my workouts which are FOR ME & ABOUT ME! If I want to see a change I do need to eat more fruits & veggies but I also need to workout cause the Spring/Summer has brought with it the crave for ice cream.. UGH!! So I did buy low fat but it's not sugar free. I am so not there yet guys... I admit I am a work in progress & always progress but with set backs. lol

The title today comes from my sons who are eating me out of house & home. No I do have food in the house but nothing prepared for dinner! On Sunday, I cooked 8pcs chicken thighs & a meatloaf. We had some spaghetti, greens, I made some sweet potatoes & warmed some grilled corn we had. Dinner for the past few days has been marvelous! Since my older son has been away for college, there has been more food to go around for the rest of us! Now Sunday dinner is almost gone except on piece of chicken a few slices of meatloaf 2pcs of sweet potatoes & some sweet corn I made yesterday. Now I have to think of dinner options? I have a headache & all I wanna do is catch up on my workout which I am behind in a little though. I need to do a session of both step aerobics & kickboxing for 45min & hit the treadmill. I did walk Sunday, yesterday & today for 30mins, this morning did step aerobics for 1hr & did a muscle endurance/boot camp mix for 1hr. Now I do need a nap but as my one workout instructor says, "You can sleep when you're dead." This I won't worry much but I try to get 6-7hours every night. Its tough cause my body is still moving & just doesn't want to rest some times but it catches up to me eventually. Then I am in the bed sleeping most of the day away to make up on a Saturday no less.

So since I need to expand my options for dinner once again in a short amount of time & I don't wanna do take out. Help me please Sparkfam!!

God bless & enjoy everyday!

Dee

I think Dede's idea is good--it IS healthful, & sounds delicious to me!

My eating is so different from your family's because my housemate & I are females in our 50s who love beans (which is fortunate since we both need to save $$) & hardly ever eat meat! But I did grill chicken thighs on Saturday & we're going to finish them off tonight. You might like this: I also grilled veggies (green, red, & yellow peppers; cherry tomatoes; mushrooms) on a grilling tray that has a rim all the way around so the little tomatoes don't roll off into the fire. Before putting them on the tray, I tossed them with extra virgin olive oil & some sprinkles of thyme & oregano, salt & pepper. They grill very quickly & are SO YUMMY!

Great way to get those emoticon emoticon emoticon in . . .

Could you pickup a rotisserie chicken and cook peppers and onions for fajitas? Then avocado slices and grated light cheese, along with shredded lettuce & tomatoes? Might not be the most healthful, but it sounds pretty good right now!
