Tonight I made my first recipe from the Sparkpeople Cookbook.
FRIGGIN YUMMY!!! I can't believe it was only 210 calories, it was SO delicious! I served it up with some Forbidden Black Rice and a big serving of my favorite squash dish - caramelized onions, basil with the squash thrown in at the last second and heated through for a few minutes, with a sprinkling of goat cheese when on the plate. It was an awesome dinner and even the boys liked it -- the trick with them is to not tell them it's healthy for them
Randy is asking me about portion sizes and calorie counts. We figured out his calorie range last night, he wants to lose 20 pounds (although I think he's pretty perfect, but hey, it's his hot body, he does what he wants!). He's been texting me all day asking me about calorie counts, it's so cute.
It kind of reminds me of something I learned in AA -- "If you want to keep it, you have to give it away." Me helping him has kept me on track today, too. It's kind of nice having someone on board with me at home. He's never been one to try to tempt me off track, but if I tell him I want to bang down some Cadbury Dairy Milk bars, he's right there with me. Hopefully we'll both be making healthier choices together for a long time.
For the first time in days, I haven't eaten enough calories -- I think I'm going to make some toast with peanut butter, that should get me right in the zone. Now, if I could only find it in me to get up on time to get a real workout in!!!
