Whew! As the weather heats up here in Vegas - I start craving crisp, cool salads. I need to get more raw veggies in my diet - but also need to keep an eye on my protein intake, so I thought about making a Nicoise salad of some sort. I seemed to remember that I had seen a veganized tuna salad recipe that used chickpeas as a sub for the tuna, so I did a quick internet search

Looks pretty good! I've never cooked with tempeh from scratch - so this'll add another ingredient use to my ever expanding arsenal of goodness! There's a cool Wiki on the origins of tempeh - who knew it hailed from the island of Java?
