Get In My Belly: 05/27 - o6/05/2012

Whew! As the weather heats up here in Vegas - I start craving crisp, cool salads. I need to get more raw veggies in my diet - but also need to keep an eye on my protein intake, so I thought about making a Nicoise salad of some sort. I seemed to remember that I had seen a veganized tuna salad recipe that used chickpeas as a sub for the tuna, so I did a quick internet search

Found this instead: Tempeh Salad Nicoise from Whole Foods:

Looks pretty good! I've never cooked with tempeh from scratch - so this'll add another ingredient use to my ever expanding arsenal of goodness! There's a cool Wiki on the origins of tempeh - who knew it hailed from the island of Java?

    Yeah, when it gets hot here, I go for salads.

    I learned to make a Homemade Very Veggie soup that I eat every other day, right now.

    Yep, chickpeas is a good sub for tuna. I've tried it a few times. A bit starchy, but otherwise okay. emoticon
