I love canned spinach. I generally don't buy canned vegetables, I buy frozen or fresh, but Publix was having a "buy one get one free" on Del Monte canned veggies so I grabbed 2 cans of spinach. I am sad that it has so little nutritional value in the canned form. Not surprised, just sad. My husband is the canned veggie king. His favorites, peas & corn. "Corn is for cows & pigs". I read that, I think in Sugar Busters. Basically corn has little nutritional value other then a filler.
I just told DH, "No more canned veggies, only frozen or fresh from now on".
He has agreed because the boy has finally converted him, mostly, into the healthy eating lifestyle.
Since they work together, drive to the job together, room together when out of town, the boy has had hours & hours & hours to explain good & bad eating. One time as they ran through a burger drive through for a quick lunch (sometimes you sacrifice quality when your strapped for time) DH got a big burger with a smaller one just because he was hungry when he ordered. He ate the big burger, started on the small one. The boy said "Let me have a bite of that" DH gladly handed it over because he feels better when he can drag someone into doing something he knows is bad food wise, makes him feel less of a failure if he has an accomplice, I've been married to this man for 25 years, I know how he thinks. The boy took the burger and promptly threw it out the window. ROTFL
I laughed so hard when he told me what he did.
He did something similar to me when we ate out at Chik Filet, I wanted a shake, he gave me a look, said "You don't really want to eat that". I did but he made me feel guilty, so I said "How about the yogurt parfait? He "allowed" me to get that. It does help when you have someone reminding you when your weak and want to eat poorly.
So its Friday. DH is home right now, has a job to look at in the afternoon. So we get to do our weekend thing a day early. We sit on the patio, have coffee and check our emails and stuff. Laptops replace the newspapers people used to sit behind.

So I started taking my B Complex supplements again. A friend who also has Central Nervous System Vasculitis. reminded me she takes B12 shots monthly due to the fatigue caused by the condition. I had started taking the B complex supplements but stopped taking them, I don't know, probably because I had the issue with the borderline anemia and started with the iron supplements.
So I thought the fatigue was due to low iron, who knows? So now I'm back to the B complex & the Iron every other day and the multi-vitamin gumi-vites yum, and the calcium before every meal.
Its a pain because The Iron pill has to be taken with a vitamin C to help absorbency, and I can't take it with any kind of calcium or withing an hour of calcium because that decreases absorption.
