Wow. I cannot believe that I slept until 10:30 today. I was up all night reading Fifty Shades of Grey. It's definitely an interesting read. I have a Kindle and I'm about 30% through and I just started it last night. My only complaint would be how poorly written it is. I went to college for Creative Writing so this just might be the lit snob in me, but the sentence structure sucks and she reuses the same words and phrases constantly. But I'll continue reading.
Now that I'm awake, it causes a bit of a problem. When I woke up I was confused at what I should eat: breakfast or lunch? I ended up having a cup of coffee, 2 scrambled eggs and a piece of toast. Breakfast is what I decided on. Now it's my normal lunch time, but I'm not hungry for lunch. It's amazing how waking up five hours later than you normally do has on your routine.
I leave for Minneapolis for the summer in a couple of weeks and I'm desperately trying to eat up all the food in my house so I don't waste. Typically before I travel I forget that I'm traveling and I grocery shop and tons of food goes in the trash. Last night I experimented with Tilapia. I'm really loving coming up with my own recipes!
Blue Moon Tilapia (2 Servings)
-2 Tilapia fillets
-1 bottle of Blue Moon
-1/4 cup flour (I used a whole wheat mix)
-1/8 cup Old Bay seasoning
-1 TBSP EVOO
Marinate the tilapia in the beer for an hour. (It ends up using BARELY any beer)
Combine the flour and Old Bay seasoning in a large plastic bag. Shake it up.
Heat oil medium hot in a large skillet.
Add tilapia and cook 2-3 minutes per side.
Lay on paper towel to cool off.
Squirt lemon juice on them to taste.
Eat and enjoy!
