Love my spinach salads

Tuesday, May 22, 2012

I was lucky to find spinach last time we went to the market. It's not always there and sometimes it is not worth getting as it's already starting to turn. This time we hit the jackpot... I'm always tempted to buy 2 bags when it's nice like that but I know we can't eat it fast enough.

yesterday's lunch:
spinach salad, chicken and cauliflower

The other thing I saw that made me smile was a People magazine in english :) It is so hard to find magazines from the US down here, Walmart has them sometimes but at 100 pesos ($8) I have to be pretty desperate to get one. I make do with my stack from a year or more ago if I need my "fix". I'll pig out when we get back north this summer :)

Love your photo's. For me the spinach salad would probably have been my whole meal. Lately I've started adding fresh, sliced strawberries to it. And I have found if you take a couple tbsp of poppy seed dressing and warm it a few seconds in the microwave it makes a delicious dressing for it.

I love spinach salads too. :) With my stomach issues, I'm not able to digest lettuce or most other greens- but spinach is one I'm soooo happy I can do!

What did you put in your salad? I usually do spinach, strawberries, feta, red onion and craisins (can't do any nuts- my son is allergic to peanuts and tree nuts). For protein I usually add some grilled shrimp or a piece of broiled fish on the side.
    Your meal looks delicious! :)

Hope you have a beautiful day!!
