Getting back on track despite my hormones not wanting to cooperate - so this week's vegan pre-portioned grab-n-go meal is Tofu Aloo Gobi (Potato and Cauliflower Curry) from the Vegan Express cookbook.
Here tofu stands in for paneer cheese - giving each portion the protein boost I so desperately need. There's 10 grams of protein in them there 177 calorie servings!

I would boost the spices a bit (I like my food bold and spicy) and the dish would benefit from a sprinkle of fresh lemon juice at the end to brighten the flavors. Overall though - decent enough for a no-frills mid-week vegan stick-to-your-ribs meal.
