Love the springtime when my asparagus starts to show it's stalks. It's one of my favorite veggies. We eat it everyday for about 2 months. One of my favorite ways is to make it on the grill with lots of other veggies and a quick marinade.
1 1/2 lb asparagus, snap off tough ends, and chop into 1 in pieces
8 oz mushrooms, sliced
1 green or red or both peppers chopped
1 med onion chopped
And add any other veggie you have
1 McCormick Grill Mates, Garlic, Herb + Wine marinade
Toss all in a zip bag. Light grill, I use a wok (for the grill) throw all in and cook for about 10 - 15 min stirring occasionally. You can even throw in shrimp and make a meal of it!!! OMG, I always make extra and then throw it in my omlet the next day!!!
