Breakfast - Jen's Gone Paleo waffles SUCCESS #2!!!!!!!! I win again! They were even better today because I topped them with pumpkin & coconut milk. Noms!
Dinner (wasn't hungry at lunchtime) - protein pudding. Pretty yummy!
My recipe for protein pudding:
1 package unflavored gelatin, prepared with 2 cups of water and set overnight
2 tbsp cocoa powder
2 tbsp whey protein (opt)
1 tsp cinnamon
dash sea salt
1 tsp vanilla
1 tsp stevia (or your sweetener of choice)
Blend everything together with an immersion blender or in your magic bullet (or other bullet-like device/blender), then chill for a few minutes before serving (or eat straight from the bowl). Feel free to mix in/blend in things like coconut or almond milk, avocado, nut butters, etc. Yummy and filling, and fun to eat!!! :D
