I've said it before that I'm just overwhelmed by the positivity and support I get here on SP. Well, I took notes of the comments to my post about my health food budgetary woes. So, I made a trip to Aldi's (I tried a new location) after work with a $25 budget. Below is a pic of all that I was able to purchase. You can't really see, but I purchased 2 dozen eggs, 2 cartons of tomatoes, 2 packages of salad greens, a bag of fresh spinach, ground turkey,as well as all the other stuff. By the way, HealthyLisa, the salad greens were marked down to 25cents a bag by the time I got there this evening.

The other day, I saw a recipe on SP for mini veggie frittatas. I used my purchases today to put a Demetria spin on the recipe. (I NEVER seem to follow a recipe as written). I just pulled them out of the oven a bit ago- let me just tell you, I can't wait until the next brunch because I'm making and taking these! Each mini frittata is 75 calories! AND, my 8 year old loves them.

I feel so successful tonight and it has nothing to do with having lost a single pound, but about the knowledge and confidence I've gained!

    It's awesome when the kids find something to eat that is healthy and they really like it! She will find more and more things along your journey and she will be better for it when she is grown and cooking for herself and her own family.

Container gardening? Take a peek at the blog post I put up today for a cool idea too! emoticon

    Funny you should suggest container gardening, I'd looked into it about 3 weeks ago and then forgot. I will get back to my research. I have a nice backyard that I don't really use much. A container garden would be easier for me to manage that a traditional one.

As for the frittatas, Taylor has put in an order for a batch for her birthday---in August! lol I'm not even going to bother to tell her they're healthy.

    Super. I agree 100% with loving the advice and support for my sparkie friend. Looks like you got a lot of bang for your buck. I with we had an Aldi's here in California. Agree with Tiffy, save a frittatas for me. Have a great week.

    Good job. That's why I love SP so much you put yourself out there and you get a lot of good suggestions. So glad Aldi's worked for you. See I told you blessings were coming your way GOD directed you to this site and guided you to write that post.

BTW, save me some veggie frittatas - LOL.

Keep up the great work! I used to shop at Aldi's but where we live now there isn't one anywhere near...but shopping farmers' markets can also be budget friendly. And you can do some container gardening to grow your own fresh herbs which makes everything taste so much better.
Good pictures...keep experimenting!
