I've said it before that I'm just overwhelmed by the positivity and support I get here on SP. Well, I took notes of the comments to my post about my health food budgetary woes. So, I made a trip to Aldi's (I tried a new location) after work with a $25 budget. Below is a pic of all that I was able to purchase. You can't really see, but I purchased 2 dozen eggs, 2 cartons of tomatoes, 2 packages of salad greens, a bag of fresh spinach, ground turkey,as well as all the other stuff. By the way, HealthyLisa, the salad greens were marked down to 25cents a bag by the time I got there this evening.
The other day, I saw a recipe on SP for mini veggie frittatas. I used my purchases today to put a Demetria spin on the recipe. (I NEVER seem to follow a recipe as written). I just pulled them out of the oven a bit ago- let me just tell you, I can't wait until the next brunch because I'm making and taking these! Each mini frittata is 75 calories! AND, my 8 year old loves them.
I feel so successful tonight and it has nothing to do with having lost a single pound, but about the knowledge and confidence I've gained!
