Breakfast... Ummmm. Ok.. So... Breakfast was made of fail, covered in fail-sauce. I was TRYING to make waffles from Jen's Gone Paleo, but I did something wrong so my waffles came out of my waffle maker in clumps... lol! I ended up eating them in a bowl, topped with pumpkin puree. The flavor was AMAZING, but I gotta figure out what I did wrong in the cooking step. Lol! Anyway... here is the recipe... to be tried again tomorrow! LOL!
"Jen's Gone Paleo: Easy Waffles
1/4 cup Roasted Sweet Potato
1 T. Coconut Flour
1/2 tsp. Baking Powder
For a little sweetness (this is how I like mine):
1 T. Cinnamon
1/2 T. Vanilla Extract
Blend ingredients in the blender (I just use a cheap Hamilton Beach blender, so any blender should work) until smooth.
Pour batter into a preheated, greased waffle iron and cook according to your waffle iron's directions.
Optional: 2 Handfuls Baby Spinach*
*The spinach wasn't in my original concoction, but was added today to get a little bit of green in. I didn't taste it, but also didn't let my waffles cool at all...the flavor may be more prominent as the waffles cool.
Serve with maple syrup, nut butter, sliced strawberries (or other fruit) if preparing the sweeter version. Serve folded around lunch meat and arugula for a savory meal. Either way, this recipe is super easy and tasty. "
Lunch - Chicken, avocado, red onions, and some hummus. (Paleo cheat meal! LOL!)
Dinner. Well, not much of a dinner, but it worked. I was in a hurry so I grabbed what I could find lol! Banana coconut "fudge" topped with almond butter, and some almonds on the side.
