A Day Late and a Blog Short

Do I get credit even if I'm a day late? huh? huh? I haven't been a model student, and I admit to slowing down mid-week, but look! I'm still standing!
It was sooo worthwhile to participate in this one-week challenge, because I did lose some poundage and it did keep me motivated. It was fun and rewarding.
I was really bad about the exercises, but I have a plethora of really good excuses: it was raining, it was muddy, I was tired, I didn't sleep well, I was really busy, the dog ate my homework.
I did read the challenge every day and fill in my accomplishments, and I did track every bite. And I did get results! Four pounds, folks!
One of the side effects was the vegetable thing. I don't care for many vegetables, so eating a new one on Day Monday made me realize how few veggies I ate. I decided I should expand my horizons, and chose red peppers as my own personal challenge. I had some (very little) red pepper in my dinner every day to see if I could learn to like it. I wouldn't cross the street for it, but now I can tolerate it. Wonder what I'll choose for next week?
And even more interesting, I am looking forward to next week's challenge.

    I make soup, put in some chicken first, add celery chopped, onion, garlic, carrots, cabbage, peas, corn, I like mexican squash. Add pepper and salt to taste, I don't use much salt, tumeric is good. I Usually freeze it and, this way you will have veggie soup ready all the time.. emoticon

    Try some jicama. peeling is a bit of a pain, but a nice munch.

    Wow - the 4 pound loss is amazing - you must feel great about that.

Yeah - veggies, there are so many ways to enjoy them - spices can really change how the taste, as does cooking/grilling.

Slice zucchini and toss in some olive oil, balsamic vinegar and coat with parmesan cheese.

Wrap tiny jalapenos in bacon and grill.

You can grill red peppers after cutting them in quarters - toss in olive oil, put them on the grill and turn when the skin starts to blacken.

Kudos for the commitment to trying new veggies - I am sure will find some you like - there are so many.

    Good going, girlie!

The challenge is supposed to be fun as well as, well, challenging, so don't sweat it if you don't do everything perfectly. I actually DO like veggies and was still surprised at how many I have never tasted. (Parsnips? What do they even look like?!?!?)

    WOW! With all those excuses, especially the dog excuse, the 4 pound loss is humungous. emoticon Amazing!

I'll second the idea of roasted Peppers. It's easy and it does change the taste. For excitement you could always roast a Jalapeno and try that. emoticon

    Sounds like you are doing great! Have some roasted red peppers one day, it is my favorite way to fix them. You roast the intact pepper until the skin is charred. You can do it on a grill, I use the broiler setting on my oven. When the pepper is black all over but it in a brown bag and close the bag up for 15 minutes. Peel off the blackened skin and you have a roasted pepper. It is sweet and delicious. You can now use it in a fajita or when it is cold you cam make a salad with it. Add minced raw garlic and a drizzle of olive oil and a bit of salt. Yum!

    That weight loss is just amazing, but I think it's equally amazing that you pushed yourself to try things you don't really like and came out the other side, if not liking them, at least tolerating them.
