Brunch. Wasn't hungry until almost 11, so when I finally got hungry I threw together some "Paleo Breakfast Cereal." Basically it's just chopped/sliced fruit, coconut shavings, all swimmin' in almond milk! I topped mine with some hemp seeds this morning for a little crunch, too.
Lunch. Chicken avocado salad yumminess!!! Also had a few Garden of Eatin's blue corn chips. Nummy!
Dinner. Cookie dough protein shake!!! One of my faves. Hadn't made it in a while, so I decided it was time to whip it up again!
1 cup almond milk
1 cup ice (more or less as needed)
1 scoop vanilla protein powder
1/4 tsp vanilla
1/4 tsp cinnamon
1/2 tbsp cacao nibs (or chocolate chips)
Blend everything up (put the chocolate chips in at the very end when it's all smooth, so they don't get pulverized) and enjoy the nomness! I topped mine with a little coconut butter & a spoonful of "paleo" cookie dough.
Another project I completed today... homemade coconut butter! Instead of paying 12-14 dollars for a jar of Artisana, I got a 16oz bag of shredded coconut at Natural Grocers for $3.49, and pureed it in my magic bullet with the flat blade for about 5 minutes. That's it! Easy as pie and DELICIOUS!
