Made this tonight and loved it. Lots of flavor!
Skinny Loaded Nachos
4 oz baked tortilla chips
8 oz 99% lean turkey breast ( I used chicken )
1t garlic powder
salt and pepper to taste
1c ff spicy black bean dip
1 1/3c reduced fat Mexican cheese
2c pico de gallo salsa
1/2c light sour cream
2/3c fresh cilantro
Pre-heat oven to 425. Place chips on 4 oven proof dishes. Heat a large nonstick skillet over high heat. Add turkey, cumin, and garlic powder, salt and pepper, and sauté until cooked through breaking up meat into small pieces. Add dip and mix well. Spoon over chips and sprinkle with cheese. Bake till cheese melts. Remove from oven and top with salsa, sour cream, cilantro. Serve! Can add jalapeños for that extra kick!
I loved this as is.( My husband and daughter wanted more cheese and meat, so theirs also had cheese dip and sausage cooked drained and rinsed of the grease.)
This really felt more like a splurge to me and was very filling. I can have my nachos and eat them too! Just need to have family's extras to add to theirs. Still the same meal. Works for me.
