Breakfast - Apple Coconut Pancakes! They are sooo soft and fluffy and just absolutely delicious!! Haha.
2 egg whites (or 1 egg if you like)
1 tbsp coconut milk (from a can)
1/8 tsp cinnamon
1 scoop vanilla protein powder (I use Whey protein or Brown Rice, but I always make sure it's only sweetened with stevia)
1 tbsp flax meal
1/4 apple, finely minced
1 date, minced
Whisk together eggs, coconut milk, and cinnamon until frothy. Add in remaining ingredients and stir to combine well, then let sit for 3-4 minutes while you preheat your griddle or pan. Drop a tiny bit of coconut oil in your pan (alt. use PAM spray or just a tiny bit of butter), and dollop spoonfuls of the batter onto the pan. You may have to flatten them out with the back of a spoon if the batter has thickened. Cook 2-3 minutes on each side, until GBD (golden brown & delicious). I top mine with coconut milk straight out of the can, but you could also mix in some vanilla and cinnamon, or you could use coconut butter instead!
Lunch: Sweet potato and some roast beef. I also had some cauliflower "rice," but I forgot and ate it before I could take a picture of it... fail.
Dinner: Turkey, cauliflower "rice," and broccoli topped with sriracha and bragg's aminos (like soy sauce). Sooo yummy!!!
