Gluten Free Bread

As a little bit of a birthday present for my BFF (her birthday was Saturday), I baked some gluten free bread. It smelled fabulous and was pretty darn easy. I used the King Arthur Flour Gluten Free Bread Mix.
I took the day off so I could take her out to buy her some running shoes as her present and then we will be hitting up Johnny Garlics for lunch. I need to check their menu to see what looks relatively healthy.
In other news, I did a 4.5 mile run yesterday. I thought I should cut back every other week to make sure my foot/ankle/calves/peroneals were recovering nicely. They feel pretty good today so I think I'll up it to 6.5 or 7 next Sunday. Then keep alternated with 4-5 miles for a month or two. I have registered for a 5K on 6/10 and a 10K on 9/1. I'm hoping that I'll be good to do the Las Vegas RnR HM in December. I'm going to wait until later to register...I don't need another $150 shirt.
Now I'm off to do some elliptical and Slim in 6. Have a fab Monday!

    Such a nice friend you are! Funny how we always seem to do the same things. I've been working on a few different recipes lately for gluten free bread. Last night I tried Bob's Red Mill Millet Flour and Rice Flour - it was french breadsticks. I have to work on the recipe still though since the taste wasn't exactly artisan bread. I've seen the flour mixes, glad to see they work out. Homemade bread, new running shoes and Johnny Garlics (not sure what it is but if garlic is in the title I'm sold!)- I'm sure your friend had a wonderful time. emoticon

    great job on the bread! It came out very nice!!! I actually laced up this am and new that I might get wet! I didn't, but the fact that I did I had to laugh at how much I have changed! Need to start ramping up the mileage myself, I have a 5K on the 19th.
