Raw Zucchini Bread

I made some raw zucchini bread today. It passed the taste test and tomorrow I will bring it with me to work for a snack. Yeah.

I also made some sweet potato chips in the dehydrator, those were very yummy. The kid ate them all, so I will have to make some more. :)

    The recipe is from "Ani's Raw Food Essentials" (I borrowed the book from the library)

2 cups chopped zucchini
1/4 cup extra-virgin olive oil
1 tsp sea salt
1 cup almond meal
1 cup flax meal

Place zucchini, oil, and salt in a food processor, and process into a puree (mine wasn't really a puree.) Add the almond meal and flax meal, and make into a batter. Spread the batter evenly on lines dehydrator tray. Dehydrate at 104 (mine doesn't tell me the temp) for 6-8 hours. Flip directly onto mess tray, peeling away the liner, and dehydrate for another 4 to 6 hours.

I flipped mine after about 4 hours and then dehydrated for another 3. I made it kind of thin so kept checking and when it looked right. I took it out. :)

I ended up slicing 1/2 of a tomato and 1/2 an avocado and had a "sandwich" It was good.

    This sounds yummy, can you share the recipe as my daughter wants me to make zucchini bread and I would love a healthier version.

    raw zucchini bread, huh? hmmmmm...LOL

Is that like raw cookie dough?
