Getting Ready for Summer mini challenge 5/5-5/19

Starting a new set of challenges! Coursework is done for my two Spring classes, finishing that last project for the never-ending summer class, and Summer 1 class starts 5/19. This is my break!
* I have adjusted my nutrition log so that I am tracking when I eat, not just what. I created new categories outlining the times that I usually eat so I can look for patterns or times of day that I am having trouble.

Goals for May 5-19:
Nutrition Goals
- continue drinking 12-18 glasses of water per day
- continue focusing on veggies and fruits
~~pack salads or veggies and lean protein for lunches daily
- continue trial of eating multiple small meals/snacks throughout the day
~~ 200-300 calorie meals 5-6 times daily (1,000-1,800 calories per day)
~~ carbs under 200g daily
~~ sodium under 1,000mg daily
~~ protein range 60+g daily
~~ limit excess/unplanned snacks
- cook dinner 4 nights per week (Tues-Sun)
~~ continue to limit meat intake

Exercise Goals:
- strength 3+ times per week
- cardio 3+ times per week
- minimum 15 minutes daily
~~ YMCA before school (5:15am)
~~ walk after school
~~ treadmill or free weights at home
~~ video at home
~~ walk or PE exercises with my students

Organization/School Goals:
- never ending summer project (complete and print by 5-19)
- begin assessments with my son and my mentor's son for July summer class
- start packing up classroom for end of year, organizing for easy access to unpack for beginning of school year next year (1 workday at the end and 1 at the beginning not taken by workshops)
- spend 15 minutes working in at least one room daily

Mental Health:
- take time to read something of choice 5 times per week
- ignore complaints from kids about what is prepared for dinner
- breathe when I feel like yelling!!
- grocery shop without the kids twice
