What a great excuse (just in case we needed one) to explore healthy menu ideas from Mexico!
I made a batch of Southwest Beans and Rice, and what's really funny is I just used up what ingredients I had on hand, and then found a recipe to match for easy posting on here and it's exact except I also added a can of green beans for the colour and nutritional advantages they bring!
Looks great and tastes great! mmmmm VIVA! (Which very appropriately means "to LIVE!")
