What a great excuse (just in case we needed one) to explore healthy menu ideas from Mexico!

I made a batch of Southwest Beans and Rice, and what's really funny is I just used up what ingredients I had on hand, and then found a recipe to match for easy posting on here and it's exact except I also added a can of green beans for the colour and nutritional advantages they bring!

Looks great and tastes great! mmmmm VIVA! (Which very appropriately means "to LIVE!")

    Thanks for the goodie my friend. I learned something after you sent it. I knew it is a celebration of Mexican heritage & pride, however I did not know it also is a celebration commemorating of the freedom & democracy during the first years of the American Civil War. My aunt came up from Florida for a month we are having a real good time with her. Visiting places she has not seen in a while & visiting family & her friends. Have a good & blessed evening.

    Southwest beans and rice is one of my favs. A chicken wrap on the side and I'm liking it. I just love when I can use what I have rather that have to run to the store for something just to prepare a recipe. Hope your day was a good one. I am doing well, but my scale is in an "I'm NOT moving stage".....sigh!....I know it will start up again....I was just hoping it would be this week. Weigh in is tomorrow and I'm just not feeling it... emoticon
